I love seasonal ingredients and my Cranberry White Chocolate Bars make the best Christmas cookies. Cranberry White Chocolate Bars- from Too Hot in the Kitchen: Secrets to Sizzle At Any Age      

Holiday ingredients for easy festive cranberry bar cookies. Tart cranberries, sweet white chocolate, the spice of ginger and nuts pack this delicious dessert with wholesome vitamins and minerals – perfect to indulge in while staying fit this holiday season. And, this recipe is also diabetic-friendly!! I like bar cookies as they are made in one pan and you are done! In fact, I think I make so many pans of this recipe during the holiday season because they are the perfect holiday bars!

48 servings

1 1/2 cups gingersnap crumbs
6 tablespoons butter, melted
1 teaspoon vanilla extract
1/2 cup dried cranberries or craisins
1/3 cup white chocolate chips
1/3 cup chopped pecans
2/3 cup of (14-ounce) can fat-free sweetened condensed milk

1. Preheat oven 350° F. Coat 13x9x2-inch pan with nonstick cooking spray.
2. In prepared pan, mix gingersnaps, butter, and vanilla; press into pan.
3. Sprinkle cranberries, white chocolate chips, and pecans evenly over gingersnap crust. Drizzle sweetened condensed milk over top. Bake 15-20 minutes or until bubbly and light brown.

Next step is to combine the ginger snap crumbs with butter and then sprinkle with the cranberries, white chocolate, and pecans. Then, drizzle the fat-free sweetened condensed milk on top and you’re ready to bake.

Layer ingredients in the pan and drizzle with sweetened condensed milk.  Pop in the oven and that is it!

  1. Hi Holly. Last night I made the Cranberry White Chocolate Bar recipe that was in the newspaper last week. They taste great; however, even though I followed he recipe exactly, mine had a tendency to fall apart when I cut them. And, even though I sprayed my pan thoroughly (it wasn’t a non-stick pan, some bars STUCK.

    Help! Please! I want to make the recipe again. Any suggestions?

  2. Hi Liz -your email just came through. Sometimes if the sweetened condensed milk goes all the way through it can stick or if you add too much. You can try adding just a little more butter to the crust and that should help. I love this recipe and I actually sometimes have had the same issues and sometimes they are perfect. So sorry for your problems because they are the perfect holiday bar!
