My Oven Baked Risotto recipe makes cooking risotto so easy.  Who has time to stand over the stove stirring and stirring to get a creamy risotto recipe?  With my easy oven risotto recipe from my KITCHEN 101 cookbook, this favorite Italian rice dish makes a quick dinner. If you’re not even sure what risotto is, let’s start there. Risotto is a popular northern Italian rice dish cooked in a broth on top the stove until creamy.  Then, you can add whatever you want to the risotto recipe.  This is one of my go to quick healthy easy recipes. Yes, you do need a special rice to cook risotto.  Sometimes in the groceries it is just called risotto or you might find it called Arborio rice.  Arborio rice is often used to make risotto as it undergoes less milling, keeping more of its starch content, making it creamy in texture. No Time Consuming Stirring to Whip up Scrumptious No Stir Risotto Recipe

This quick cooking easy no stir risotto recipe will become a family favorite. Serve as a side or entree. Either way, you’ll love the flavor and flexibility with the recipe.

Makes 5 (1-cup) entrees or 10 (1/2-cup) side servings

2 tablespoons butter, melted
2 1/2 cups low-sodium fat-free chicken broth
1 cup Arborio rice
1 cup chopped onion
Salt and pepper to taste

1. Preheat oven 400 F°
2. In 13x9x2-inch baking dish, mix together butter, broth, rice, onion and season to taste. Bake, covered, 35 minutes. Remove from oven and fluff rice with fork.
