Also, it is my go to summer lemon dessert because I can whip it up so quickly and it is light and refreshing!   I also like the fact you can make it ahead of time and cross it off your list.  Once you make this no bake lemon pie with cream cheese, it will become one of your favorite luscious lemon go to desserts. This easy lemon dessert with cream cheese recipe is so simple and so divine and I get so many recipe requests. Everyone loves cheesecake and this no bake lemon pie with cream cheese is a cross between a cheesecake and pie. It’s from the Lovin No Oven chapter in this fun cookbook!  I serve this easy lemon dessert with fresh berries for a nutritional boost and I think raspberries are my favorite berries.  Serve with your favorite fruit.

Makes 8-10 servings

1 (8-ounce) package reduced-fat cream cheese
1 (14-ounce) can fat-free sweetened condensed milk
1/2 cup lemon juice
1 tablespoon grated lemon rind
1 (9-inch) prepared graham cracker crust

1. In mixing bowl, mix together cream cheese, sweetened condensed milk, and lemon juice until smooth and creamy and stir in lemon rind.
2. Transfer to graham cracker crust and refrigerate pie until firm for about 4 hours.
