Fun and Festive Healthy Green Smoothie
My healthy Green Smoothie from my Eating Well Through Cancer cookbook, is a fun way to celebrate Saint Patrick’s Day and National Nutrition Month, because this gluten free, and diabetic friendly snack is such a fresh and yummy way to sneak in fruit and veggies into your day. Feel free to adjust ingredient amounts to your preference and add your favorite fruits and vegetables.

Bright green spinach and bananas pack my healthy Green Smoothie with vitamins and minerals, while skim milk and Greek yogurt give it low sugar protein and creaminess. You know spinach is loaded with healthy nutrients by the rich color green; boasting powerful antioxidant protection, and you can add it to any dish you can – even smoothies! Kids of all ages will love the boost this easy healthy recipe gives!
Green Smoothie from Holly Clegg’s Trim and Terrific Eating Well Through Cancer cookbook
Fresh and invigorating, this delightful and nutritious smoothie will be satisfying morning, noon or night. This makes 2 servings, but easily can double amounts to feed more.
Makes 2 (1-cup) servings
1 cup packed baby spinach
1/3 cup coconut water
1/3 cup Greek vanilla yogurt
1/3 cup skim milk
2/3 cup ice
1. Combine all ingredients in blender and puree until smooth, about 1 minute.

Terrific Tip: Add more liquid to reach desired consistency of this healthy green smoothie, or add more ice to thicken.
