I stumbled upon this easy Black Bean Soup recipe when my roommate decided she wanted to become vegan. Being the amazing friend that I am, I thought I would aid her in this journey and go in search of Holly’s cookbooks for the best vegan recipe.  I found this recipe for black bean soup. I knew we both would like a healthy black bean soup recipe but I thought finding a solely plant based recipe would be difficult.  But,  I found this delicious vegan Black Bean soup recipe from KITCHEN 101, along with other healthy easy recipes, within the first couple of pages and it’s so good I’m never looking back!

Quick Healthy Black Bean Soup from KITCHEN 101

Take a short-cut with canned beans combined with southwestern seasoning for an instantaneous delicious recipe for black bean soup. Remember this makes a great crock pot black bean soup also!

Makes 8 (1-cup) servings

1 onion, chopped
1 green bell pepper, cored and chopped
1 teaspoon minced garlic
1 (14 1/2-ounce) can chopped fire-roasted tomatoes with juice
1 (4-ounce) can chopped green chilies
1 teaspoon ground cumin
1 teaspoon chili powder
4 (15-ounce) cans black beans, rinsed and drained
4 cups fat-free low-sodium vegetable broth
Salt and pepper to taste

1. In large pot coated with nonstick cooking spray, sauté onion, green pepper, and garlic until tender, 7 minutes.
2. Add tomatoes with juice, green chilies, cumin, and chili powder. Gradually add black beans and broth.
3. Remove 2 cups of black bean mixture, puree in processor or blender until smooth.
4. Return pureed mixture to pot, bring to boil. Lower heat, simmer 10–15 minutes. Season to taste.
