I am pretty sure that I have created the best bruschetta recipe! My easy Tomato Bruschetta recipe from my trim&TERRIFIC Eating Well Through Cancer cookbook hits the spot with the season’s ripest tomatoes, basil and Kalamata olives. Fresh basil recipes are the best! This pick-up just cannot be beat, especially with home-grown tomatoes and fresh basil – and even I can grow basil!  However, I make my bruschetta with tomatoes year round because you can always get these fresh ingredients. Easy Tomato Bruschetta Recipe is My Go-to Summer Tomato Appetizer

Every summer get-together needs an appetizer to appease hungry guests, and in my family, summer wouldn’t be complete without my Tomato Bruschetta recipe. Although this best bruschetta recipe has been around for years, no one gets tired of it! This fresh classic is a cinch to throw together – just chop, toss and spoon it on crusty bread. It is also easily doubled or tripled so you won’t have to stress about feeding a crowd. Those bright red tomatoes get their color from lycopene, the powerhouse antioxidant proven to reduce the risk of certain cancers.

Easy Tomato Bruschetta Recipe from trim&TERRIFIC Eating Well Through Cancer cookbook 

I think I have created the best Bruschetta recipe ever! A fresh, simple and delicious mixture of tomatoes, fresh basil and Kalamatas from the olive bar.  One of those fresh basil recipes that makes a difference and especially for seasonal summer recipes!

Makes 16 servings (bread with about 2 tablespoons topping)

1 loaf French bread
Garlic cloves or minced garlic
1 1/2 cups finely chopped tomatoes (about 1 1/2 pounds, seeded)
1/4 cup chopped Kalamata olives
1/4 cup chopped onion
2 teaspoons olive oil
1 teaspoon balsamic vinegar
5–6 fresh basil leaves, chopped or 1 teaspoon dried basil leaves

1. Preheat oven 450°F. Slice French bread into thin slices and bake about 10 minutes or until crispy. Remove from oven and rub garlic clove across top.
2. In bowl, combine all remaining ingredients. When ready to serve, top toasted bread.

Terrific Tip: Ahead of time, toast bread and make bruschetta mixture to put together for a quick, delicious snack or appetizer on your time frame.
