This fabulous no bake strawberry cheesecake dessert is also a healthy cheesecake recipe in one fabulous indulgence! My goal is to give you desserts that are simple and better for you.  KITCHEN 101 is my easiest cookbook.  This berry cheesecake recipe combination is perfect for anyone who loves an easy no bake strawberry cheesecake.  I am sure that is everybody! Remember. you easily can turn this recipe into a Strawberry Cheesecake Parfait! Just grab a glass and you have an amazing, simple and impressive dessert presentation! For you Weight Watchers, this strawberry cheesecake has Weight Watcher SmartPoints.

Makes 8 parfaits

1 pound strawberries, stemmed and sliced
1 tablespoons sugar
1 (8-ounce) reduced-fat cream cheese
1/2 cup plain or vanilla nonfat Greek yogurt
1/2 cup confectioners’ sugar
1 teaspoon almond extract
1 1/2 cups frozen nonfat whipped topping, thawed, divided
2/3 cup graham cracker crumbs
Mint, garnish, optional

1. In bowl, sprinkle strawberries with sugar and toss. Set aside.
2. In mixing bowl, beat cream cheese, yogurt, confectioners sugar and almond extract until smooth. Fold in 1/2 cup whipped topping.
3. To assemble parfaits, in small dish or glass, layer graham cracker crumbs, cream cheese filling, and strawberries. Repeat layers if small enough dish.  Then, top with dollop of whipped topping. Garnish with mint, if desired.

I make this easy no bake strawberry cheesecake with strawberries but any berry combination is fine. Luckily, you can find fresh strawberries year round and not only during strawberry season. When a recipe calls for either plain yogurt or Greek yogurt, use either.  However, Greek yogurt because is richer, creamier and thicker yogurt.  Also, Greek yogurt has more health benefits too. Try to include fresh fruit in  your dessert recipes or even salads.
