Makes 4 cheese steaks

1 (1-ounce) packet brown gravy mix
1/2 pound shaved deli roast beef
1 small onion, thinly sliced
Half green pepper, cored and thinly sliced
4 buns or rolls
4 slices provolone or Swiss cheese, shredded or thinly sliced

1.In nonstick small pot, prepare gravy mix according to directions. When gravy thickens, add roast beef.
2. Meanwhile, in medium nonstick skillet coated with nonstick cooking spray, sauté onion and green pepper until tender, about 5-7 minutes.
3. Split open rolls and place cheese on one side and toast until cheese is melted. After toasted, place about 1/3 heaping cup meat mixture onto bottom of roll. Top with sliced green pepper and onion and replace other half of roll.

When I was in New Orleans, a well known restaurateur told me about how he made his easy Philly Cheese Steak sandwich recipe. He said that he prepares this yummy simple sandwich recipe all the time and especially during Mardi Gras when he needed to feed lots of people.  It also makes an easy fix when people come over to watch football. Dickie Brennan gave me the recipe and he owns some of my favorite restaurants in New Orleans. When I am in New Orleans, I love to eat at all the Dickie Brennan restaurants and especially the amazing Coconut Cake at Dickies Steak House!  One time he even brought me a piece of his famous Coconut Cake from the steak house to the Bourbon restaurant. I will tell you a secret and that he is the nicest person ever!

Beef is one of those foods I love to include in my trim and terrific recipes, mostly because I enjoy eating meat. Grabbing the ingredients, shaved deli roast beef, from the deli counter couldn’t be easier. Now, you can also buy different flavored roast beef from Cajun to seasoned.  Combined with a savory gravy on the stove top and you have one of my favorite simple sandwich recipes that tastes gourmet. Sauteed onion and peppers with melted provolone add the perfect melt-in-your-mouth touch to my easy Philly Cheese Steak recipe!  Did you know that bell peppers are loaded with Vitamin C so be sure to give them a try? I actually like to saute assorted colored peppers.  For a short cut, just pick them up at the grocery already sliced. You must also try my Asian Sliders–burgers with Asian seasonings served in a bun.  Talk about good!
