Everyone loves cheesecake and this no bake lemon pie with cream cheese is a cross between a cheesecake and pie. It’s from the Lovin No Oven chapter in this fun cookbook! Makes 8-10 servings
1 (8-ounce) package reduced-fat cream cheese
1 (14-ounce) can fat-free sweetened condensed milk
1/2 cup lemon juice
1 tablespoon grated lemon rind
1 (9-inch) prepared graham cracker crust
1. In mixing bowl, mix together cream cheese, sweetened condensed milk, and lemon juice until smooth and creamy and stir in lemon rind.
2. Transfer to graham cracker crust and refrigerate pie until firm for about 4 hours.
