I had so much fun cooking up simple, delicious anti-inflammatory diet recipes at WWL-TV in New Orleans. I knew immediately which recipe to prepare on TV. One of my easiest and most popular recipes in my arthritis cookbook is Salsa Chicken. This quick Mexican chicken dish includes salsa and only four ingredients. Serve over rice to take advantage of the tasty southwestern sauce.
Guacamame Makes Easy Quick Dip
Talk about a super tasting dip and a favorite of my arthritis recipes! This wonderful delicious and nutritious dip combines avocado and edamame–which are two of my favorites. Guacamame includes fantastic flavors and everyone loves this popular edamame recipe. Serve with veggie rounds or use as a spread to stuff vegetables or on a wrap or sandwich. It is from my practical arthritis cookbook which includes a variety of arthritis diet recipes.
Makes 10 (1/4-cup) servings
1 large avocado, (about 2/3 cup mashed)
1 1/2 cups shelled edamame, thawed
2 tablespoons lime juice
1/2 teaspoon minced garlic
1/2 cup salsa
3 tablespoons nonfat plain Greek yogurt
Salt and pepper to taste
1. In food processor, combine all ingredients and blend until smooth.
Terrific Tip: Stuff vegetables with mixture or use as a sandwich spread.
Nutrition Nugget: Soybeans are high in omega 3 fatty acids. Omega 3’s are necessary to ingest through food for their anti-inflammatory benefits.
